Yes, I know this is not quite a cake recipe but I just thought that this date and walnut loaf recipe was well worth sharing with you. This loaf recipe is simple and easy to follow. I hope you enjoy making this loaf as I do.
225g Stoned dates, chopped into small pieces Grated rind and juice of 1 lemon 175g Butter 175g Light, soft brown sugar 3 Eggs, beaten 175g Self-raising flour 55g Chopped walnuts
8-10 Walnut halves to finish
Method
Put dates in a saucepan with lemon rind and juice and 70ml of water. Cook for 5 mins until a soft puree. In a bowl, beat the butter and sugar together until light and fluffy. Gradually beat in eggs. Fold in the flour and chopped walnuts. Spread one third of the mixture over the base of a 1kg loaf tin (greased and base lined). Spread half the date puree over and repeat the layers, ending with cake mixture.
Arrange the halved walnuts in a line down the centre of loaf. Bake in the oven for 1 – 1½ hours 170°C/325°F/Gas 3 until well risen and firm to the touch. Leave in tin for 10 minutes, and then remove to a wire rack to cool. Serve sliced.
