Double Chocolate Muffins


You've just got to try this Double Chocolate Muffins Recipe. This is a chocolate muffin recipe is quick and easy to make and a must for all chocolate lovers out there.

Ingredients

125g Plain Chocolate
50g Cocoa powder
225g Self-raising flour
5ml Baking Powder
50g Soft, dark brown sugar
Pinch of salt
125g Plain chocolate drops
225ml Milk
60ml Vegetable oil
5ml Vanilla essence
1 Egg

Method

Place 12 large paper cases in deep muffin tins (NB. these are American style muffins – ordinary bun tins are too shallow)

Melt the plain chocolate. Remove from the heat and stir in the remaining ingredients. Beat thoroughly together.

Spoon the mixture into the paper cases and bake in the oven at 220°C/425°F/Gas 7 for 15 minutes or until well risen and firm to the touch.

They are best served warm. We've never manged to leave them time to cool! :)
