Ingredients
Cake
175g Carrots, peeled and grated 85g Walnuts, chopped 425g can Crushed Pineapple 175g light soft brown sugar 3 Eggs 300g Plain flour 1 tsp Bicarbonate of soda 2 tsp Baking powder 175ml Sunflower oil
Frosting
115g Cream cheese 55g Soft butter 175g Icing sugar Few drops of vanilla essence
Decoration
Crystallised pineapple (if desired)
Method
Preheat oven to 180°C/350°F/Gas 4 Grease a 23cm loose-bottomed cake tin and line base with non-stick paper
In a bowl, stir carrots and walnuts together. Drain the pineapple and add to bowl with sugar and eggs. Sift flour, bicarbonate of soda and baking powder into the bowl. Add sunflower oil to bowl and beat thoroughly to make a smooth batter. Pour mixture into prepared tin. Bake in the oven for 50 – 60 minutes until well risen and a skewer inserted into the centre comes out clean.
Transfer cake to a wire rack to cool.
To make frosting, beat together cream cheese, butter, icing sugar and vanilla essence in a bowl until smooth. Spread over cake and decorate
