It's a breakfast treat with a bit of fruit you can feel good about.
Preheat your oven to 375 degrees.
In a small bowl combine 1/3 cup of sugar and cinnamon.
In a medium bowl, cream butter and 1/3 cup sugar until smooth and then add your eggs and mix until fully incorporated.
In a large bowl combine sifted flour, baking powder and salt. Add the contents of your medium bowl to this mixture and incorporate completely.
Take a 9 inch non-stick square baking pan lightly coated with baking spray or shortening and pour half your batter into the pan. Lay the apple slices on top of the batter so they cover it completely.
Next, sprinkle half of the cinnamon and sugar mixture over the apple slices, then pour the rest of the batter on top and sprinkle the remaining cinnamon and sugar on top of that.
Bake for approximately 25 minutes or until your cake is golden brown and passes the "toothpick test".
You can garnish with a few more apple slices or some cinnamon sticks but this coffee cake is great just the way it is. Just pour some coffee!
