Bitesize Cheesecake Recipes

These bitesize cheesecake recipes are made using deep bun tins to give you more filling. These mini cheesecakes should be served warm

Ingredients

Pastry8oz plain flour
2 oz butter or margarine
2 oz white vegetable fat
2-3 tbsp cold water

Filling4 oz curd cheese
2 oz butter, softened
1 egg
1 egg yolk
2 oz fresh white breadcrumbs
2oz caster sugar
6oz mixed dried fruit
1 tbsp double cream
rind of 1 lemon grated
1 tbsp brandy

Pre-heat the oven to 200C/425F/Gas 7

Make the pastry: Measures the flour into a bowl and rub in the fats with your fingertips until the mixture resembles fine breadcrumbs. Bind to a soft but not sticky pastry with the water. Roll out the pastry thinly on a lightly floured work surface and use a 7 cm cutter to stamp out about 24 rounds. Use these to line the bun trays and chill.

For the filling mix the cheese with the butter and then stir in all the remaining ingredients. Spoon generously into the chilled pastry cases and bake in the pre-heated oven for about 15 minutes or until the bitesize cheesecakes are beginning to brown on top. Allow to cool slightly before serving.
