Although the coffee buttercream frosting listed below is an excellent addition, it is completely optional. The one in the picture has a caramel sauce instead of a frosting.
Give it a try and see just how easy it really is.
Cappuccino Cake with a caramel sauce
1 cup Plain Chocolate
1 tbsp. Instant Coffee Granules
1 cup Butter, softened
1 cup Dark, soft brown sugar
1/2 cup Ground almonds
1 cup Corn flour
2 tbsp. Strong coffee, cooled
2 tbsp. Dark Rum
1 1/4 cups Whipping Cream
Cocoa powder or chocolate shavings to decorate
Grease a 9 inch round, spring-form release cake pan and line the base with parchment paper.
Melt the chocolate with the instant coffee and leave to cool slightly.
Cream the butter and sugar together until pale and fluffy. Beat in the eggs, one at a time, and beat well after each addition. Fold in the almonds, corn flour and melted chocolate. Pour into the prepared tin and level the surface.
Bake in the oven at 350°F for about 75 minutes or until risen and just firm to the touch.
Cover the cake with parchment paper to prevent it becoming too brown, if necessary. Leave cake to cool in the pan.
When cold, prick the cake all over with a fork. Mix the coffee and rum together and pour evenly over the cake. Leave for at least 30 minutes.
Remove cake from tin and transfer to a serving plate. Frost the cake (optional) with the Coffee Frosting list below.
Whip the cream until it just holds its shape. Put a spoonful the whip cream on each slice when serving and dust with a little cocoa powder.
2 cups icing sugar
1/4 cup soft butter
3 tbsp. Strong brewed coffee
1 tsp vanilla extract
Mix all the ingredients together and blend well. You can add more coffee if it is too thick or icing sugar if it’s too runny.
Spread on cooled cappuccino cake.
