3/4 cup sugar
3/4 cup butter or margarine
3 eggs, beaten
1 cup all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2 tbsp cocoa powder, sifted
2 tbsp milk
3 tbsp orange juice
Grated rind of ½ orange
3/4 cup sifted icing sugar
2 tbsp orange juice
melted chocolate for garnish (optional)
Beat the sugar and butter together in a medium mixing bowl until light and fluffy. Gradually add the eggs, beating well after each addition. Carefully fold in the flour, baking powder and salt.
Divide the mixture in half. Add the cocoa and milk to one half, stirring until well combined. Flavor the other half with the orange juice and grated rind.
Place spoonfuls of each mixture into a lightly greased 8 inch deep round cake pans and swirl together with a knife to create a marbled effect.
Bake in a preheated oven, 375°F, for 20 minutes or until the cake is springy to the touch.
Let this cake cool in the pan for about 5 minutes before transferring to a wire rack.
When the cake has cooled completely add this orange frosting to add the perfect touch to this chocolate cake.
In a medium size mixing bowl, add the icing sugar and mix in the orange juice a little at a time until it form a smooth frosting.
Frost the top of the cake and once it is set drizzle some melted chocolate over the top of the cake. Or try adding the chocolate to the icing sugar and orange juice for a chocolatey orange frosting.
