Hot Cross Buns

When making your hot cross buns if you want a more definite cross make up some short crust pastry, roll into thin strips and make a cross on the top of your buns.

Ingredients

1lb strong plain flour
1 tsp salt
1 tsp mixed spice
1 tsp cinnamon
½ tsp grated nutmeg
1 sachet dried yeast
2oz caster sugar
2 oz butter
5fl oz tepid milk
5 tbsp tepid water
1 egg
3oz currants
2oz mixed peel

To Glaze
2 tbsp granulated sugar
2 tbsp water

Grease 2 baking trays.

Measure the flour, salt, spices, yeast and sugar into a large bowl and stir to mix. Make a well in the centre and pour in the melted butter, milk, water and beaten egg. Add the currants and mixed peel to the mixture last. Mix to a soft dough. Turn out onto a floured work surface and kneed for about 10 minutes. Return to the bowl and cover with cling film and leave to rise for about 2 hours.

Turn out the dough and need again for 2-3 minutes. Divide into 13 equal pieces and shape each one into a round bun. Make a cross on the top with a knife and place onto the baking trays. Cover with cling film and leave to rise for about 30 minutes.

Pre-heat the oven to 220C/425F/Gas 7.

Bake the buns for 15 minutes until brown and hollow sounding when tapped. Dissolve the sugar in the water over a gentle heat. Brush the buns with the mix as soon as they come out of the oven.
