Chocolate Marshmallow Cake

Chocolate Marshmallow Cake, another great recipe using Chocolate, but topped off with a fluffy marshmallow frosting!

This one is for all the marshmallow fans. Easy to make and tastes fantastic.

It's one you will have to try.

Adding the marshmallow frosting to this cake makes it irresistible. Everyone is going to want to try this beautiful white cake with chocolate inside.

You can make it fancy or add colorful decorations to make it fun, maybe even a border of mini-marshmallows if there will be kids involved.


Chocolate Cake and Marshmallow Frosting Recipes


Ingredients

Cake

Chocolate Marshmallow Cake

• 1/3 cup unsalted butter
• 1 cup white sugar
• ½ tsp vanilla extract
• 2 eggs, beaten lightly
• 1 cup chocolate chips
• 2/3 cup buttermilk
• 1 1/2 cups all-purpose flour
• 2 tsp. baking powder
• ½ tsp baking soda
• Pinch of salt

Marshmallow Frosting

• 2 cups or 20 large white marshmallows
• 1 tbsp milk
• 2 egg whites
• 2 tbsp white sugar

Garnish Ideas

• 1/4 cup milk or dark chocolate, grated to decorate

• S'mores cake: add 1/4 cup crumbled graham crackers

• Decorate with mini-marshmallows

• Decorate with colorful candies



Directions

Cake

Cream the butter, sugar and vanilla together in a bowl until pale and fluffy, then gradually beat in the eggs.

Melt the chocolate in a bowl over a saucepan of simmering water. Gradually stir in the buttermilk until well combined. Cool slightly.

Sift the flour,baking powder,  baking soda and salt into a separate bowl. Add the chocolate and the flour mixtures alternately to the creamed mixture, a little at a time.

Spoon the mixture into a 5 1/2 inch loaf pan greased with butter and smooth the surface. You can also use two 9 inch round cake pans and use a little marshmallow frosting to hold them together.

Bake in a preheated oven, 325°F, for 50 minutes (30-35 minutes for 2 9-inch pans) until a toothpick inserted into the center of the cake comes out clean. Turn out onto a wire rack to cool.


Marshmallow Frosting

Heat the marshmallows and milk very gently in a small saucepan until the marshmallows have melted. Remove from the heat and cool.

Whisk the egg whites until soft peaks form, then add the sugar and continue whisking until stiff peaks form. Fold into the cooled marshmallow mixture and set aside for 10 minutes.

When the marshmallow cake is cool, cover the top and sides with the marshmallow frosting. Top with grated milk chocolate and you have a great dessert for your Sunday dinner.




Here is another recipe for marshmallow frosting that I think is an excellent alternative to the recipe above.

Marshmallow Buttercream Frosting


2 cups soft butter
2 1/2 cups icing sugar
1 tsp. almond extract
1 (13 ounce) jar marshmallow creme

In a medium mixing bowl with an electric mixer, cream butter until it is soft and fluffy.
Then slowly add the icing sugar; next add the almond extract.
Gently fold in the marshmallow creme until it is thoroughly combined.


If you want to make a chocolate marshmallow frosting add a couple tbsp of cocoa before you add the egg whites. Either way, this marshmallow cake will be moist and delicious.
