No Bake Blueberry Cheesecake

This quick and easy no bake blueberry cheesecake tastes fantastic. It’s chalked full of blueberries and creamy goodness.

If you are looking for a birthday cake idea this easy cheesecake recipe would be perfect for anyone that loves cheesecakes.

It would be easy to substitute other fruit instead of the blueberries but then it wouldn’t be a blueberry cheesecake recipe.

But substituting the redcurrant jelly for blueberry jelly would be something you can do.

Instead of the graham cracker crumbs you could use crushed Oreos.

There are lots of variations you could do with this recipe but it is amazing just the way it is.


Let's Make a No Bake Blueberry Cheesecake


Ingredients

a blueberry cheesecake
Crust
• 3/4 cup graham cracker crumbs
• 3/8 cup butter, melted
• 1/4 cup brown sugar

Cheesecake Filling
• 8oz cream cheese
• 2 tbsp. caster sugar
• 2/3 cup double cream
• 2/3 cup Greek yogurt
• juice of 1 ½ lemons
• 1/4 cup blueberries

Topping
• 3/4 cup blueberries
• 4 tbsp redcurrant jelly
• 1/2 cup whipped cream (more if you want a thicker layer)


Directions

Mix together the ingredients for the crust and using a metal spoon press over the base of an 8 inch round, springform cake pan.

Measure the cheese and sugar into a large bowl and mix well. Add the cream and yogurt and mix again. Gradually add the lemon juice, whisking all the time. Fold in the blueberries.

If you want more color in your cheesecake, crush the berries to spread the blue around, then turn the mixture into the tin on top of the crust and leave in the fridge to set overnight.

Carefully loosen the sides of the graham cracker crust then remove the side of the springform pan and slide the cheesecake on to a serving plate.

Add the topping by spreading the whipped cream on the cheesecake layer and arrange the fruit on top of the whipped cream. Heat the redcurrant jelly and carefully brush over the fruit. Leave to set.


This would be great if you know an adult that loves cheesecake and is having a birthday. You could always substitute the redcurrant jelly for blueberry jelly.
