Over many years of cake baking I have tried many different rich chocolate cake recipes.
Most were good and pretty easy to make but not always getting my taste buds craving for more!
So I decided I would create my own recipe for a rich chocolate cake, moist and full of chocolate and many calories!
This is sure to become your favorite recipe for chocolate cake, whether for cupcakes, layer cakes, or flat cakes for special occasions.
Molasses and extra vanilla are the not-so secret ingredients that make this recipe so special.

And here it is.
1 1/4 cups sugar
1 1/2 cup all-purpose flour
1/2 cup tapioca flour (or more plain flour)
2/3 cup cocoa powder
1 1/2 tsp baking powder
3/4 tsp baking soda
1 1/2 cups boiling milk
1/2 cup 70% finely chopped dark chocolate
1 large egg, plus one yolk
1/3 cup sunflower oil (or your favorite light oil)
1/3 cup treacle (molasses)
2 tsp vanilla extract
Directions for cake batter
Heat oven to 350°F and grease the bottom of a 8x3.5 inch deep round cake pan (or two shallow ones) with non-stick spray.
Sift sugar, flours, cocoa, baking powder, and baking soda into a large mixing bowl.
Boil the milk in a double boiler, then add the chocolate. Heat and stir gently until it is completely melted.
Remove from heat and leave to cool for about 15 minutes, then beat in the eggs, oil, treacle and vanilla.
Whisk the milk mixture into the dry ingredients for 30 seconds until smooth then pour the batter in to the prepared cake pan.
Bake for 1 hour in the deep cake pan, or 35 – 40 minutes in two shallow pans, or until a toothpick inserted in the center comes out clean.
When the cake has cooled, split, fill and coat top and sides with the chocolate fudge frosting.
And now the Frosting: this is my favorite chocolate frosting and the one I use on many of my chocolate cake recipes.
Be careful, as too much of this cake will add a few pounds on! But it is yummy.
2 tbsp treacle (molasses)
2/3 cup light brown sugar
3 egg yolks
1/2 cup cocoa
1/2 cup corn flour
1 1/4 cup milk
1 cup dark chocolate finely chopped
about 1/2 cup boiling water
1/4 cup unsalted butter, softened
2 tsp vanilla extract
In a saucepan, beat together the 6 ingredients until the mixture is smooth.
Then bring it to a boil, stirring constantly so it doesn’t burn on the bottom of the pan.
Remove from the heat, and beat in the chocolate and enough boiling water to make it smooth and creamy.
When just warm, beat in the vanilla and softened butter, a little at a time.
Use immediately to fill and coat your chocolate cake as it will firm quickly.
