Rock Cake Recipe

This rock cake recipe is inexpensive and you can make the cakes as large or as small as you wish. They are best eaten on the day of making.

Ingredients

8oz self raising flour
2 tsp baking powder
4oz soft margarine
2oz granulated sugar
4oz mixed dried fruit
2oz currants
1 egg
1 tbsp milk

Pre-heat the oven to 200C/400F/Gas 6. Grease two baking trays.

Measure the flour and baking powder into a large bowl, add the margarine and rub in with your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar and fruit. Add the egg and milk and mix to a stiff mixture. If dry add a little more milk.

Shape the mixture into about 12 rough mounds on the baking trays. Bake for about 15 minutes or until a pale golden brown. Cool on a wire rack.
