This moist and delicious date and walnut cake recipe is fun and easy to make. Is it a cake or a loaf? Either way, it’s worth making.
Adding the lemon frosting recipe listed below is optional but it gives the cake a fresh flavor you will love.
Another nice flavor you might enjoy would be a caramel flavored frosting or even a caramel glaze.
Either way, this cake would be perfect as a morning or afternoon snack with your coffee or iced tea.

2 cups Stoned dates, chopped into small pieces
Grated rind and juice of 1 lemon
1/4 cup of water
3/4 cup Butter
1 cup Light, soft brown sugar
3 Eggs, beaten
3/4 cup all-purpose flour
1 tsp. Baking powder
Pinch of salt
2/3 cup Chopped walnuts
Optional: 8-10 Walnut halves for garnish (more if desired)
Put dates in a saucepan with the lemon rind, juice and the water. Cook for 5 minutes until it becomes a soft puree.
In a bowl, beat the butter and sugar together until light and fluffy. Gradually beat in eggs. Fold in the flour and chopped walnuts.
Spread one third of the cake mixture over the base of a greased 9x5 loaf pan. Spread half the date puree over the cake mixture and repeat the layers, ending with cake mixture.
Put the halved walnuts on top of the date cake.
Bake in the oven for about 1 – 1 1/2 hours at 325° F until well risen and firm to the touch and passes the “toothpick test”.
Leave it in the pan for about 10 minutes and then move it to a wire rack to cool completely. Once the cake is cool, spread the lemon frosting on top and serve at your next social gathering.
1/4 cup melted butter
1 tbsp. lemon juice
1 tsp. vanilla extract
2 cups icing sugar
Combine all the ingredients and beat until it is light and fluffy. You can add more icing sugar to make it thicker or more juice to thin it out.
Spread it over your cooled cake and enjoy.
